Nothing says summer like fresh cut, juicy watermelon. This classic summertime treat is the perfect sticky sweet snack to enjoy hanging out by the pool.
The Watermelon Mojito kicks off our Summer Sip series with a refreshing twist on a classic cocktail.
Ingredients (serves 6):
30 fresh mint leaves
4 thick slices of watermelon, seeded and without rind
10 oz of light rum
½cup of simple syrup
⅓ cup of lime juice
Sprigs of mint
Skewer of watermelon for garnish
1. Mash the mint leaves in a small bowl then add a pinch of sugar.
2. Combine the watermelon, rum and simple syrup in a blender and blend until smooth.
3. Spoon the mashed mint leaves into a large pitcher, then fill the pitcher with the watermelon mixture and stir.
4. Pour the mixture over ice in 6 glasses and top them off with the mint sprigs and watermelon skewer.
5. Cool off and enjoy!
